If I am totally honest I am not a huge fan of Tuna. In contrast, my wife loves it. As a result, it rarely gets cooked in our home.
I think I can find it quite bland and a little dry. That is probably partly due to the way I cook it as I tend to ensure it is cooked through. I have learned over the last few years that marinating food not only adds flavour but also helps in the whole cooking process. In my view, it helps keep the meat moist and also help prevent burning, not fully, but does help.
This is a really simple dish comprising of very few ingredients. It mixes orange with soy and garlic for the tuna to be added and marinaded overnight. Served on a bed of noodles with some Gem Lettuce that is halved and spread with garlic butter.
I really enjoyed the whole of this plate. The flavour of the Tuna was lovely, the texture was moist and really nicely complimented by the Noodles and charred Gem Lettuce.
Orange and Soy Marinated Tuna Steak

Ingredients
For the Tuna Steak
- 2 x Tuna Steaks
- 1 x Large Orange
- 2 tbsp light Soy Sauce
- 2 x Garlic Clove
- 25g Butter
- 2 x Gem Lettuce
Method
Slice the Orange in half and squeeze the juice into a bowl. Rind one of the halves and add the rind to the bowl with the juice.
Finely chop 1 Garlic Clove and add to the Orange.
Add the Soy Sauce to the mixture and stir well together before adding the Tuna steaks. Make sure you get the Tune well covered. Place in the fridge and leave it to marinate overnight.
When you come round to cooking set your BBQ up for direct cooking. Whilst the BBQ is being prepped to cook on, get the Tuna out from the fridge.
Crush the Garlic Clove and mash with the butter in a bowl.
Slice the Gem Lettuce in half and on the flat sides thinly spread the garlic butter mix.
When the BBQ is up to the correct heat (aim for 200°C) start by placing the Gem Lettuce flat side up and cook for 5 minutes.
Add the Tuna to the grill and turn your Gem Lettuce. Grill the Tuna for 2-3 minutes and then turn it over and cook for a further 2-3 minutes.
Remove the Tuna and Gem Lettuce from the grill and plate up. Serve with noodles or rice.
